Potato salad

Ingredients:

  • 2 pounds (about 900 g) potatoes (Yukon Gold or red potatoes work well)
  • 1 cup (240 ml) mayonnaise
  • 2 tablespoons Dijon mustard (or yellow mustard)
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • 1/2 cup (75 g) celery, finely chopped
  • 1/2 cup (75 g) red onion or green onions, finely chopped
  • 1/2 cup (75 g) pickles or relish, chopped (optional)
  • Salt and pepper to taste
  • Optional: fresh herbs (like dill or parsley) for garnish
  • Optional: hard-boiled eggs, diced (for added richness)

Instructions:

  1. Cook the potatoes:

    • Wash and peel the potatoes (if desired). Cut them into evenly sized chunks (about 1-2 inches).
    • Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt.
    • Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender but not mushy.
  2. Drain and cool:

    • Drain the potatoes in a colander and let them sit for a few minutes to cool slightly. You can also rinse them under cold water to stop the cooking process.
  3. Prepare the dressing:

    • In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
